Kombucha, Explained: The Fermented Tea on Our Menu

Alongside our kava shells and elixir teas, kombucha holds a proud spot on the Elixir Lounge menu. If you've seen it on tap or in the cooler and wondered what it actually is, here's the short course on this fermented tea.

What Is Kombucha?

Kombucha is a fermented tea with roots going back roughly two thousand years, most often traced to Northeast Asia. It's made from four simple ingredients: black or green tea, sugar, water, and a starter culture called a SCOBY — a symbiotic culture of bacteria and yeast, often nicknamed the "mother."

How It's Made

Brewers steep the tea, stir in sugar, let it cool, and add the SCOBY along with a splash of kombucha from a previous batch. The vessel is covered with a breathable cloth and left to ferment at room temperature for one to two weeks. As the culture works through the sugar, the brew develops its signature tart flavor and natural carbonation. Many brewers add fruit or herbs in a second fermentation for extra fizz and flavor. What It Tastes Like

Think of kombucha as sitting somewhere between iced tea and sparkling cider: tart, lightly sweet, and gently fizzy. The flavor changes with the tea base, the length of the ferment, and whatever fruits or botanicals the brewer adds — no two batches are quite alike.

Is It Alcoholic?

Fermentation produces only a trace amount of alcohol, and commercially sold kombucha is classified as non-alcoholic (under 0.5% alcohol by volume) — a natural fit for our alcohol-free bar.
